Tue 1/9: Closed for Holiday Party

CACTUS will be closed on Tuesday, January 9th, for our annual Holiday Party!  Our employees have worked hard all year we’re showing them our appreciation for a job well done!

We will be open for our normal business hours on Monday, January 8th, and Wednesday, January 10th!

Parking Lot Renovations

As many of you may recall, a lot of parking lots were resurfaced around Kailua in October and November.  Well, now it’s our turn!  Starting Monday, January 8th, the parking lot for the Davis Building, where CACTUS is located, will be under renovation for 2 weeks.  It will be done in two phases:  Phase 1 from January 8th to January 12th, Phase 2 from January 15th to January 19th.

This schedule is weather permitting.  Guest parking will be available, but limited, and signs will be posted to direct guests during the project.  Please see the above photo for an overview of closed sections.  We will be open for our regular business hours during the renovations (except for Tuesday, January 9th, closed for our Holiday party.)   We apologize for any inconvenience.

The Chivito!  The Birth of a National Dish

The year was 1946.  The place was El Mejillón Bar in Punta del Este, Uruguay.  A patron from Argentina rushed into the bar, looking for a quick bite.  He asked for a Chivito, which in his country is traditionally made with roasted goat, his favorite.  Antonio Carbonaro, the frantic bar owner, didn’t have any goat, so he whipped up a torta that would go down in culinary history.  He used a beef filet steak, topped with cheese, tomatoes, mayonnaise, bacon and a fried egg.  Who could resist a beef steak topped with a fried egg and bacon?  Obviously the mysterious Argentinian loved the sandwich!
The mouth-watering ”Chivito” (little goat) holds the title of the national dish of Uruguay!  Our “Chivito” Burger is aways a favorite for lunch at CACTUS, pictured here with our Tostones (fried plantains)!
